
Lingcod in the oven
Description
The dish is prepared without unnecessary complications. You can fry the fish in a pan, but baking it in the oven is much healthier and helps preserve a crispy crust. Instead of escolar, you can bake other types of fish (fillets). Serve the fish with a light vegetable side dish, preferably fresh vegetables. The fish can be served either chilled or hot. The ready dish can be served immediately.

Place corn croutons in a bowl, add paprika, and mix.

Crack a chicken egg into a bowl, add salt and pepper to taste, and whisk everything with a fork. Melt the butter.

Thaw the sablefish fillet and rinse it thoroughly, then pat it dry with paper towels.

Dip the fish first into the egg, then into the mixture of cornmeal and paprika. Pour melted butter over the fish.

Transfer to a baking sheet with parchment paper or a baking dish and place in a preheated oven at 200 degrees for 20 minutes.

Take the fish out of the oven, then serve it with boiled broccoli and a slice of lemon.
