Liver-filled zrazy

Description

The recipe won't take much time. You can use any variety meat you prefer for these zrazy—heart, liver, or lungs. However, they should be boiled separately, as each requires a different cooking time. The zrazy don't need long frying, since all ingredients are almost cooked. After frying, you can bake them in a preheated oven at 180°C (356°F) for 5–7 minutes. But don't leave them in too long, or they may spread out and turn into something resembling pancakes. Serve hot.

    Prepare all the necessary ingredients for making liver zrazy.

    Wash the liver and boil in salted water until cooked. This took me about an hour. Then remove from the broth and let it cool slightly.

    Wash the potatoes and boil them in their skins until cooked. Drain the water, peel them, and mash. You can do this using a potato masher or by passing them through a meat grinder. Let them cool completely.

    Finely chop the onion and sauté it in 1 tablespoon of oil over medium heat for 7 minutes, stirring occasionally.

    Cut the liver into pieces and grind through a meat grinder or chop in a blender.

    Add the sautéed onion to the minced liver, season with salt and pepper, and mix everything well.

    With wet hands, flatten each ball into a patty and place the liver filling in the center. Then bring the edges together and shape into firm rissoles.

    Place the cutlets into the breadcrumbs and roll them on all sides, pressing gently.

    Place oil in a frying pan, preferably non-stick, and heat over medium heat. Put the zrazy in the pan, leaving space between them, and fry over slightly lower than medium heat for 5–7 minutes until golden brown. Then flip and cook the other side the same way. Remove from heat and serve immediately.
