Description
The recipe won't take much time. Start by boiling the eggs. Cut the beef into portion-sized pieces and thinly pound each piece into a square shape. Chop the onion, boiled eggs, parsley, breadcrumbs, and fresh mushrooms. Sauté the onion for a couple of minutes in oil, then add the mushrooms and cook for another 3–4 minutes. Mix everything together. Place a portion of the filling in the center of each meat square, fold in the edges, shape into elongated cutlets, and tie with kitchen string. Season the prepared cutlets with salt and pepper, then sear them in a skillet until a crust forms. Next, sauté onion, carrot, tomato, and parsley for about 5 minutes. Pour broth or water over the cutlets, add the sautéed vegetables, and simmer for about an hour. Mix a small amount of flour with some of the broth formed during cooking. Remove the cutlets from the broth, cut off the strings, return them to the pot, add the flour mixture, and simmer for another 20 minutes. Add pepper, basil, or any other favorite meat seasonings. Buckwheat porridge, mashed potatoes, or boiled vegetables go very well as side dishes. Serve hot.
