Actually, I used to think that cutlets (zrazy) were exclusively a practical way to use up leftover mashed potatoes. But that's not true at all—cutlets can essentially be any kind of patty with any filling. In this recipe for semolina cutlets with meat, for example, the filling turns out absolutely delicious—juicy and tender with a delicate creamy flavor from the cheese. So do try it—you'll end up with a wonderful dish.

1. Boil the eggs in advance until hard. Let them cool.

2. Mix the minced meat with half a cup of semolina. Blend the onion into a puree using a blender and add it to the minced meat as well. Add starch, salt, and spices to the mixture. Stir until smooth and well combined.

3. Now let's prepare the filling. In a blender, finely chop the tomatoes, cheese, and herbs. Add the boiled eggs, cut as finely as possible. Mix thoroughly and add spices to taste.

4. With wet hands, take the minced meat and form a patty. Place the filling in the center, then fold the edges over. Roll it gently in your hands to ensure the filling is securely enclosed. Coat in semolina.

5. Now simply fry the cutlets on both sides over low heat, and serve immediately with any side dish!
