
Turkey cutlets
Description
The dish is prepared without unnecessary complications. Turkey cutlets are less fatty than pork ones and much more tender than those made from beef or chicken breast. You can buy minced meat at the store, but it's best to prepare it at home. Not only hard cheese but also mozzarella, suluguni, or any other good melting cheese will work well. Green onions can be replaced with sautéed onion, and you can add your favorite spices to the meat mixture and filling. The finished dish is ready to serve.

Prepare all the necessary ingredients for making turkey zrazy. Wash and dry the turkey fillet. Sort through the green onions, wash them, and shake off the water.

Cut the turkey fillet into pieces and pass through a meat grinder with a medium grid. Place the minced meat into a bowl and add a raw egg.

Put the breadcrumbs into a bowl.

Season the turkey mince with egg and breadcrumbs, salt and pepper.

Mix everything well and let it sit for 10 minutes. Then mix again and beat the meat mixture. To do this, gather the mixture in your hand, lift it above the bowl, and drop it back in. Repeat this 10–15 times. This will make the mixture more uniform and dense, helping the zrazy hold their shape.

For the filling, grate the hard cheese on a medium grater and place it in a bowl.

Finely chop the green onions and add them to the cheese.

Peel the boiled egg and grate it on a coarse grater. Place the eggs in a bowl with the onion and cheese, add salt, and mix well.

Divide the meat mixture and filling into equal portions. Flatten each portion of the meat mixture into a patty and place a portion of the filling in the center. Bring together the opposite sides of the meat patty and seal well.

Coat all the cutlets in breadcrumbs.

Pour vegetable oil into a frying pan and heat over medium heat. Place the patties seam-side down in the pan and cover with a lid. Fry the patties for 4-5 minutes on each side, until cooked through and golden brown.
