
Golden Rum Cake
Description
Perfect with tea and coffee. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius). Grease baking pan and dust with flour. Evenly sprinkle chopped nuts over the bottom of the pan. In a large bowl, combine cake and pudding mixes. Mix in eggs, 1/2 cup water, oil, and 1/2 cup rum. Beat well. Pour batter into the pan over the nuts. Bake in preheated oven for 60 minutes, or until a toothpick inserted comes out clean. Let stand in pan for 10 minutes, then invert onto a serving plate. Glaze the cake. As the cake absorbs the glaze, continue applying it until all the glaze is used. For the glaze: in a saucepan, combine butter, 1/4 cup water, and 1 cup sugar. Bring to a boil over medium heat, then continue cooking for 5 minutes, stirring constantly. Remove from heat and stir in 1/2 cup rum. Serve cooled or slightly warm.
