
Winter roasted tomato sauce
Description
In summer, tomatoes ripened under the hot sun are especially delicious and sweet. You could make tomato sauce from roasted tomatoes every day, but I definitely also prepare this for winter storage. Below I show in detail. Perfect with pasta, meat, and vegetables.

Wash the vegetables and greens, peel the onion, carrots, and garlic.

Cut the tomatoes into large slices, place them on a baking sheet. Drizzle with olive oil, season with salt and pepper to taste, and top with basil leaves. Bake in the oven at 180 degrees for 30 minutes.

Finely chop the onion and garlic, grate the carrot on a coarse grater. Sauté in heated oil until golden brown.

Peel the roasted tomatoes, add them to the pan, and simmer for 5 minutes.

Transfer the vegetables to a bowl, add sugar and salt to taste, blend to a puree using a blender, then return to the pan. Pour in the white wine and simmer over medium heat for 15 minutes.

For winter storage, pour the hot sauce into sterilized jars and cover with lids. Place the jars in a pot and fill with warm water up to the "shoulders" of the jars. Bring the water to a boil and sterilize for 15 minutes.
