
Mirror glaze for cake
Description
This glaze is poured over frozen mousse cakes. You can color the entire glaze in one shade or make it in several colors. The finished cake should be cut with a warm knife to prevent the glaze from sticking to the blade. Good luck!

Before starting, soak the gelatin for 15 minutes.

Then combine glucose syrup, sugar, and water. Heat until the sugar is completely dissolved.

Separately combine white chocolate and condensed milk. Pour in the hot sugar mixture and stir until the chocolate melts.

Also add the swollen gelatin to the hot mixture. Mix everything well.

Add the food coloring and blend the mixture with an immersion blender, taking care to avoid forming air bubbles.

Then strain the glaze through a sieve. This will help remove excess air. Cover with plastic wrap, pressing it directly onto the surface, and refrigerate for 24 hours.

To glaze the cake, heat the icing to the working temperature of 35-37 degrees. Pour the glaze over the finished cake and let the excess drip off. Tuck any remaining hanging edges underneath the cake. Transfer the cake onto a serving plate, decorate to your taste, and place it in the refrigerator.
