
Strawberry wine
Description
The drink is quick and easy to prepare. However, making this wonderful wine will require patience, as the process takes about 4 months. First, crush the berries and let them ferment for 2 weeks, stirring periodically. Then remove the cap of strawberry residue that forms on top, transfer the wine into a jar, and install a water lock. Over the next 3 months, periodically siphon the wine off the sediment, adding sugar each time. After each step, the wine will become clearer and more attractive in appearance. Good luck! The beverage is now ready to serve.

Carefully sort through the berries, removing any spoiled or moldy ones – they can permanently ruin the taste of the future wine. Mash the good berries into a puree, place in a glass container, cover, and leave in a dark place at room temperature for 2 weeks. Periodically gently shake the mixture to stir the layers.

Then, for a day and a half, do not disturb the wine, allowing the layer of leftover strawberries to gather at the surface. Remove this layer with a skimmer and squeeze out the juice. Strain the remaining liquid in the container and combine it with the extracted juice.

Pour all the wine into a jar and place it under an airlock for 8–10 days. If you don't know how to set it up, you can simply cover the jar with a medical glove, making a small hole in one of the fingers.

Then filter the wine, trying to achieve maximum clarity. Pour it back into the jar and install an airlock or a glove.

After a week, the wine will need to be siphoned off the sediment using a hose or tube. Try to transfer only the liquid during this process, without disturbing the sediment. The wine is then returned to the jar with the airlock. Next, the wine should be siphoned off the sediment again after 10 days, then after another 2 weeks, and once more after 3 weeks. After each of these procedures, the wine will become clearer and more visually appealing. The total fermentation time at this stage will take about 2.5 to 3 months.

The total amount of sugar should ultimately be 70 grams per liter of the finished product. Add the sugar in portions at several stages, after each racking from the sediment. Dissolve the measured portion of sugar in a small amount of warmed wine, then pour it into the rest and mix thoroughly. If you start the wine-making process in June, you can taste the young strawberry wine by mid-October, which during the dreary autumn weather will bring you the scents of summer and a bit of its warmth and good mood.
