Step 1

Wash parsley thoroughly and dry. Place in a blender, add 3 tablespoons of water, and blend into a puree.

Sift the flour into a container, add salt, the egg, the remaining water, and parsley puree. Knead the dough, cover with a damp towel, and let it rest for half an hour.

In a saucepan, bring water to a boil and add salt. Add the salmon fillet and cook for 15 minutes. Peel and finely chop the onion and garlic. Remove the fillet from the saucepan, let it cool slightly, then mash it with a fork into a puree. Add the onion, garlic, and lemon juice. Season with salt and pepper. Mix well.

Divide the dough into two parts. Roll out one part on a floured surface into a thin layer. Mentally divide the layer in half. Place 1 tsp of filling onto one half, spacing each about 3-3.5 cm apart.

Cover with the second half. Pinch the edges.

Use a small glass to cut out circles with filling. Place the dumplings on a floured tray and put them in the refrigerator. Roll out the remaining dough and make dumplings using the same method. Cook like regular dumplings.
