Green Onions for Winter

Description

Homemade preserves keep for a long time. Onion stored this way keeps very well and doesn’t lose its appearance—look at the last photo; it looks as fresh as new, doesn’t it? The whole secret is that you need to dry the onion very thoroughly after washing to remove all the water; then it won’t clump together and will stay loose and attractive. Store it in freezer containers or regular zip-lock bags. Do not thaw before use. Frozen green onion is perfect for omelets, casseroles, sauces, and soups. It looks great in baked goods, savory muffins, and bread. I add the white part of frozen onion to the sauté base for soups. Store in a cool, dark place.

    Prepare the green onions. Wash them thoroughly and dry them well. Right away, prepare the container you plan to freeze them in—I use plastic containers with lids. Regular bags work too.

    Cut the white part of the bulbs and place in one container.

    Slice the green part of the bulbs and place in a separate container.

    Tighten the lids securely and place in the freezer for storage.
