
Green bread
Description
Delicious baked goods for the whole family. When sliced, the bread has a fine-crumbed texture; it slices beautifully into thin slices and has a wonderful, balanced flavor. If you wish, you can adjust the ratio of rye to whole wheat flour in either direction while keeping the other ingredients and the preparation method the same.

Gather all listed ingredients on the table. Frozen spinach does not need to be thawed in advance.

Place the yeast in a large bowl, add sugar to them.

Pour in 150 ml of warm water, and whisk everything with a whisk until the yeast has fully dissolved.

Add whole wheat flour to the yeast mixture.

Whisk everything with a whisk until the mixture is homogeneous — the sponge. Leave it undisturbed for 40 minutes with the bowl covered by a kitchen towel.

Meanwhile, prepare the spinach mixture. Put all the spinach into the blender jar and pour 100 ml of water over it.

Run the blender for one minute; in the end you should have a bright green mixture.

The sponge has already risen in the bowl.

Add the green spinach mixture to the sponge.

Stir everything with a spoon until fully combined.

Add all the rye flour and salt to this mixture.

Knead a soft dough that barely sticks to your hands. On baking parchment lined on a baking sheet, shape the future loaf of bread by hand and make several shallow slashes on the surface with a sharp knife. Leave the shaped loaf to rise for 2–2.5 hours in a warm place, covered with a kitchen towel.

The dough has risen. Place the baking sheet with the shaped dough (or formed loaf) in an oven preheated to 180°C and bake for about 45 minutes.

Cool the finished bread completely on a wire rack, and only then slice it.

The crumb of baked bread takes on a gray-green tint because rye flour is in the dough. If you want to bake this bread with more wheat flour and less rye flour, the green color will become more intense.
