
Green Tomatoes in Their Own Juice
Description
This year I put up quite a lot of green tomatoes for winter, but I want to enjoy a tasty snack made from them right now, so my recipe is just the thing here. It can be served warm or chilled.

Prepare all the necessary ingredients. Tomatoes can be either fully green or slightly brownish.

Cut the tomatoes into slices about 6 mm thick.

Finely chop the parsley. Pass the garlic cloves through a press. Mix.

**In a deep bowl, or a glass container, place about a third of the chopped tomatoes. Season with salt.**

Now spread approximately one third of the parsley and garlic mixture.

Again, arrange the tomatoes, salt them, and add garlic with herbs again, then repeat once more. You should end up with at least three layers. Do not mix.

Cover the tomatoes with a plate of the appropriate size and place a weight on top. Refrigerate the tomatoes overnight in this state.

Look how much juice the tomatoes released! And these are green tomatoes, which seemingly have no juice at all!
