
Green Tomatoes, Georgian Style
Description
Homemade preserves keep for a long time. Make the tomato marinade as usual: dissolve the salt and sugar in boiling water, remove from the heat, and pour in the vinegar. Pour it hot right away into prepared jars. Georgian-style green tomatoes can also be made another way: instead of sealing in jars, place the stuffed tomatoes in a container, cover with plastic wrap, and press down with a weight. Put in a cool, dark place for a couple of weeks. In this case, Georgian-style green tomatoes will cure in their own juice—for 3 kg of tomatoes, add 200 grams of salt (no sugar or vinegar); add everything else in proportion according to the recipe. Every three days you will need to check the tomatoes and turn them over so all the fruit stays evenly in the brine. You will get an excellent appetizer for those who like spicy pickles. Good luck! Jars keep for up to a year in a cool place.

Wash the cherry tomatoes, make slits with a sharp knife, and soak in hot water for 25 minutes.

Wash the herbs, peel the garlic, and remove the seeds from the bell pepper.

Stuff the cherry tomatoes with herbs chopped in a blender.
