Description

Making green spinach pancakes is no more difficult than making regular pancakes; the only thing you’ll need is one more ingredient – ground spinach. You can use either fresh or frozen. Spinach pancakes turn out a bright green color, very appetizing and tender. These pancakes can be served as a standalone snack with various sauces. You can also wrap any filling in them – processed cheese with garlic, fish, eggs, seafood. Such a snack will look original even on a festive table. If desired, green pancakes can be made sweet, but then you’ll have to add more sugar to mask the spinach flavor. They can be served with tea or coffee.

    Prepare all the necessary ingredients. If you have fresh spinach, chop it using a blender or a meat grinder until it reaches a porridge-like consistency. If you have frozen spinach, it is most likely already chopped, so you will just need to thaw it.

    Beat the eggs with milk, add salt and vegetable oil.

    Add the spinach purée. Mix.

    Gradually add the flour, stirring so that there are no lumps. You may need more or less flour, depending on how juicy the spinach is. The batter should be fairly liquid, viscous.

    Lightly grease the pan with vegetable oil (only for the first pancake) and heat it well. Use a ladle to spread the batter over the entire bottom of the pan. Cook the pancakes over medium heat on both sides until done.

    The pancakes are ready, serve them with mayonnaise, sour cream, or other sauces.
