
Green risotto
Description
The dish is prepared without unnecessary complications. The pleasant color comes from green basil and spinach. You can use just one of them if you can't find both, or substitute parsley or cilantro. Risotto is simple to make, but it's so delicious and delicate that you can confidently serve it even at a festive table. Serve and enjoy it hot, right after cooking. The dish is ready to be served.

1. Pour the chicken (vegetable) broth and dry white wine into a saucepan, place over heat and bring to a boil over low heat, then reduce the heat and keep warm. Peel and finely chop the onion and 3 garlic cloves.

2. Heat vegetable oil in a separate saucepan, add the onion and cook for 10 minutes until it becomes semi-transparent, then add the garlic and rice, cook until the rice turns slightly brown.

3. Gradually add 1 cup of the wine and broth mixture at a time. After it has almost completely evaporated, add the next cup, cooking and stirring constantly until the rice is cooked al dente.

4. Wash the green onion, spinach, and basil, and peel 1 garlic clove. Add the washed greens to a food processor or blender bowl, along with the garlic, almonds, olive oil, and cheese. Blend until smooth. Add 1-2 tablespoons of water if necessary.

5. Add the mixture obtained in the blender and the cream to the pot with rice, season with salt to taste, and mix.
