
Green butter
Description
Universal dressing for salads and hot dishes. Green butter is a divinely delicious thing that every self-respecting cook should learn to make. Green butter is widely used in French cuisine—it's spread on bread, served as a sauce, added to hot dishes, salads, desserts... In short, there's almost nothing you can't do with it. Essentially, it's just regular butter, only much more aromatic and flavorful. The key is to never try making authentic green butter with margarine or dried herbs. Only fresh butter and fresh herbs.

Finely chop the garlic greens.
