
Green adjika
Description
A delicious addition to everyday and festive dishes. If you follow this green adjika recipe exactly, you will get a tasty but very spicy sauce. Not everyone will be able to eat it, as not everyone enjoys spicy food. Therefore, here's a tip: if you'd like a milder adjika, use equal proportions of hot green peppers and sweet green peppers. The color will remain the same, but it won't be as spicy. Serve the sauce with meat or fish, or use it as a salad dressing.

Put the green peppers in newspaper and leave overnight to dry. The next day, carefully remove the seeds from the green peppers while wearing gloves.

Pass the peppers, garlic, and herbs through a meat grinder.

Add salt and spices. Mix with your hands (only wearing gloves, otherwise you'll burn yourself).

Green adjika is ready. Serve cold as a condiment. If you want to preserve it in jars, add a little vinegar and more salt.
