Herbs for Winter

10 min4 serv.21 февр. 2026 г.

Description

Perfect for stocking up for winter. Modern freezers make it easy to freeze enough vegetables, fruit, mushrooms, and herbs for the whole family to use through winter. That way you can eat healthy, vitamin-rich foods in winter without buying them at the store. Dietitians strongly recommend eating fresh greens every day. In winter, when stores sell only greenhouse herbs of questionable benefit, greens frozen in summer will save the day. Today I’ll show you how to make a stash of fresh greens easily and quickly—see the recipe. Serve at the table or keep in the pantry.

Instructions

    Step 1

Soak the herb bunches in cold water, then rinse thoroughly under running water.

Trim the stems. It's best to freeze the stems separately from the leaves.

Finely chop the parsley and dill stems.

Divide among bags; do not overfill them—a thin layer makes it easier to store the greens and later break off the piece you need for soup or salad. Squeeze the air out of the bags and tie them closed. Put in the freezer and store for up to a year.
