
Homemade Zeltz
Description
The appetizer is quick and easy to prepare. Serve zelts only chilled. You can make it from chicken, beef, pork, or turkey meat; feel free to add any vegetables you like. In appearance, zelts resembles kholodets or aspic, but it is not eaten with a spoon—it is sliced into pieces and served with pieces of bread. The appetizer is ready. Serve immediately.

1. Rinse the pig's head and pig's feet under running water. Remove the brain from the pig's head.

2. Scrape and wash the pork tongues.

3. Place the pig’s head, feet, and tongue in a large pot, cover with cold water, and set over heat. In several layers of cheesecloth, place sprigs of thyme and parsley, cinnamon, a bay leaf, cloves, peppercorns, nutmeg, and coriander; tie with string and add to the pot. Add the peeled vegetables and salt. After it comes to a boil, skim off the foam and simmer over low heat for about 3 hours.

4. After 1.5 hours, remove the pork tongues and set them aside to cool, then remove the skin and cut the meat into pieces. Cool the remaining parts of the pork carcass after boiling, trim off any meat portions, and mix all types of meat together.

5. Strain the broth through a fine-mesh sieve or through cheesecloth.

6. Line a bread loaf pan or any other container with plastic wrap or a polyethylene bag. Place the meat in it, pour the broth over it, cover with plastic wrap, and refrigerate overnight (8–10 hours).

7. After the required time has passed, remove the mold and make sure the zelts has set. Carefully remove it from the mold and store it in the refrigerator; when serving, slice it into small pieces.
