Continuously whisking, add the hot sugar syrup in a thin stream. Whisk for 7 minutes.

Dissolve 3 g of citric acid in 2 tablespoons of hot water and add it to the mixture. Beat again for 1-2 minutes. The result should be a fluffy mass that holds its shape well.
