
Kiwi Marshmallows
Description
The recipe won't take much time. Before you start cooking, keep in mind the output volume: the stated amount of ingredients yields 30 halves and 15 whole marshmallows. If you need a larger quantity, proportionally increase the ingredient amounts. Serve chilled.

Prepare the ingredients.

Remove the core from the apple, place it in a covered microwave-safe container, and microwave for 5 minutes.

Separate the flesh of the baked apple.

Puree the apple flesh through a sieve.

Peel the kiwi and blend it in a blender until smooth.

Place the kiwi purée over low heat, add 125 grams of sugar, and simmer for 3–5 minutes from the moment it starts boiling.

Measure 50 grams of apple puree and 100 grams of kiwi puree.

Pour 80 ml of water into a saucepan, add agar-agar, stir, and let it steep for 15 minutes.

Beat the egg white and 125 grams of sugar, gradually adding the sugar, until stiff peaks form.

Add the fruit purée to the beaten egg white.

Beat the egg white with the fruit puree until fluffy foam forms.

Add 238 grams of sugar to the infused agar-agar, bring to a boil while stirring constantly. Boil for another 5-6 minutes after boiling starts.

Gradually pour the sugar syrup into the whipped protein-fruit mixture in a thin stream, continuing to whisk until the mixer leaves distinct traces on the whipped mixture.

By this point, you should already have prepared the surfaces for piping the marshmallow, lined with parchment paper. Transfer the marshmallow mixture into a piping bag and pipe it onto the sheet. For this quantity of ingredients, two sheets the size of a standard baking tray were required. Let the marshmallows dry at room temperature for about 12 hours.

Sprinkle powdered sugar onto a plate, put on a rubber glove, pair the marshmallows together, and roll them in the powdered sugar.
