
Meringue from aquafaba

Prepare all the ingredients.

Peel the apples and remove the cores, then cut them into cubes. Transfer to a saucepan, add a little water to the bottom, and simmer until soft.

Remove from the stove, add sugar, and blend with a blender until smooth.

Press the purée through a sieve. Pour it back into a saucepan and reduce to a thick consistency.

Pour the aquafaba into a bowl and start beating it with a mixer.

Beat in a bowl for about 5 minutes until soft peaks form. Then gradually add sugar in portions. Beat for another 4-5 minutes until stiff peaks form. Pour in the lemon juice and beat again. At the end, you can add food coloring.

Next, prepare the syrup. In a saucepan, combine water, sugar, and agar-agar. Bring to a boil and reduce until it reaches a honey-like consistency.
