
Rabbit in sour cream
Description
The recipe won't take much time. Hare in sour cream is extremely simple to prepare. Cut up the carcass—you can ask the butcher to do this for you. Rinse and pat dry with paper towels. Place the hare pieces into a bowl, season with salt, pepper, and spices, and let marinate for about two hours. Then slice the onion. Transfer the hare to a baking dish, sprinkle with onion, cover with a lid, and bake in the oven at 200°C (392°F) for one hour. Then add sour cream—one or two cups—and bake for another 30 minutes. 1. Cut the rabbit into 6-8 pieces, depending on the size of the carcass. Rinse and pat dry. Place into a deep bowl or pot. Sprinkle with salt, black pepper, and spices; rub them in thoroughly. Add bay leaves. Cover the pot with a lid or wrap with plastic wrap, and let marinate in a cool place (on the bottom shelf of the refrigerator) for 1.5–2 hours. Some people prefer to soak the rabbit in beer instead, in which case do not use spices.

2. After 1.5–2 hours, peel and thinly slice the onion into half-rings. Preheat the oven to 200 degrees. Grease a deep ovenproof dish with vegetable oil. Place the pieces of hare with spices into the dish, then arrange the sliced onion on top. Cover the dish with a lid or foil and put it in the oven for one hour.

3. After an hour, mix the sour cream with salt and pepper, then pour it over the rabbit. Bake in the oven for another 30 minutes. You don't need to cover it with a lid. Serve with rice, potatoes, porridge, pickled vegetables, and mushrooms as side dishes.
