
Milk‑based boiled pancakes with holes
Description

Prepare the listed ingredients.

Crack the chicken eggs into a deep container. Pour in milk of any fat content and add sugar, salt. Whisk everything together for about 1–2 minutes.

Add the wheat flour and whisk the thick pancake batter. It will become thicker. Then pour boiling water into the batter and whisk it quickly again. Remember that the boiling water should be added after the flour, but not before it, otherwise the egg mixture will curdle! Pour in the vegetable oil and mix the batter.

Since the batter is scalded with boiling water, it does not need to rest for 15–20 minutes. Immediately heat the pan until hot and for the first time coat it with vegetable oil. Heat the pan again and reduce the heat. Pour some batter onto it and quickly swirl. The batter will form holes. Fry the pancake on both sides for about a minute over medium heat.

Similarly, prepare the remaining pancakes by pouring the batter onto a hot skillet. Place them on a plate and serve with honey. There's no need to wrap the filling in such pastry—it will seep through the holes.
