Yeasted pancakes with kefir and boiling water
Description
Perfectly pairs with tea and coffee. Serve the pancakes immediately while they're still hot, or keep them covered in a warm place. Do not reheat them in the microwave, as pancakes will become dry and rubbery. The pancakes turn out quite sweet, so you can fill them with cottage cheese, fruits, or serve with sweet sauces, jams, or sour cream. Serve cooled down or slightly warm.
Instructions
- 1
Step 1

Prepare all the necessary ingredients for making yeast-free pancakes with kefir and boiling water.
- 2
Step 2

Break the eggs into a bowl and add salt.
- 3
Step 3

Add sugar to the bowl with eggs.
- 4
Step 4

Whisk everything well until the sugar and salt are completely dissolved.
- 5
Step 5

Pour the kefir into the egg mixture and mix well until smooth.
- 6
Step 6

Pour vegetable oil into the mixture and stir.
- 7
Step 7

Sift the flour into the bowl with the eggs and kefir; this will aerate the flour, making the pancakes more tender and preventing lumps.
- 8
Step 8

Add vanilla sugar to the mixture and whisk well until a smooth, non-liquid dough forms. The dough should have the consistency of thick sour cream; add more flour if necessary. Cover the bowl with a towel and let it rest on the kitchen counter for 15–20 minutes.
- 9
Step 9

Bring the water to a boil and pour it over the baking soda, then stir. It will start to foam; this is the neutralization process.
- 10
Step 10

Vigorously stirring the dough, immediately pour the boiling water with baking soda into the dough. The result should be a smooth, runny batter.
- 11
Step 11

Grease the pan with vegetable oil, place over medium heat and heat. Pour in a portion of the batter and spread it over the bottom of the pan. Cook the pancake until the top sets and the bottom becomes golden brown.
- 12
Step 12

Fry the other side and transfer the pancake to a plate. Prepare all the pancakes until the batter is used up, stacking them in a pile.
- 13
Step 13

Remove from the oven and serve warm or cooled.
