
Steamed Easter Kulich
Description
Homemade baking for tea. There are many recipes for kulich. Personally, I consider this one of the most successful for myself! I have been making kulich according to it for many years, and I really hope the result will please you as well. The bake turns out very tender, airy, fluffy and, of course, tasty! With the listed amount of ingredients I get two medium kulich. If you expect a large group of friends or plan to give kulich to loved ones, feel free to increase the ingredients two or three times. The bake is insanely delicious! You won’t regret it. It can be served with tea or coffee.

Prepare all the ingredients.

Rinse the raisins and soak them in boiling water.

Measure 20 ml of milk, warm it to a lukewarm temperature, add 0.5 tsp of sugar and the yeast. Stir and let it sit for a few minutes until the characteristic “cap” appears.

Bring the remaining milk to a boil, add 25 grams of butter, stir, remove from the heat and immediately add 25 grams of flour. Actively stir the lumps and let the custard batter cool.

Melt the remaining butter in the microwave and let it cool.

Separate the yolks from the whites, add salt, 50 grams of sugar, and vanillin.

Whisk the egg whites separately with the remaining sugar.

In a deep bowl, combine melted butter and sour cream.

Add the yolk mixture, beaten egg whites, the cooled cooked dough, and the risen starter. Stir and add the sifted flour.

It should turn out a fairly sticky but thick dough. Cover it and let it rise in a warm place for 1–1.5 hours.

The dough should increase about twofold. Now you can add to it the dried and flour‑coated raisins and candied fruit.

Stir the raisins and candied fruit into the dough, grease your hands with vegetable oil and spread the dough into the greased molds. Cover the molds with a clean towel and let them rest for 30–40 minutes.

As soon as the dough has risen, place the molds in a preheated 180 °C oven for about 30 minutes. Baking time will depend on the size of the molds.

Glaze the finished kulich and decorate to taste.
