
Yeast-free baked bread
Description
Perfectly pairs with tea and coffee. Preparing this bread takes one to two days. If you save some of the starter, the next preparation will be significantly shorter. This bread is incredibly delicious (especially because it's made by your own hands). Don't be intimidated by the complexity—by the second time, you'll be able to make it even without the recipe. The baking is done. Serve at the table.

1. I use ready-made sourdough starter. In advance, I always save a portion of the starter (part of the sourdough). To feed it, add 100 ml of water and 80 g of rye flour. Leave the sourdough at a warm place for 12 hours (avoid drafts!). Sourdough behavior varies, so keep an eye on it. If fermentation proceeds normally (there are bubbles in the sourdough, and it increases in volume), you can separate a portion of the starter and store it in the refrigerator. If your sourdough is freshly made, it doesn't need feeding. Leave our 180 g at a warm place, and put the rest in the refrigerator for next time.

2. Now prepare the sponge: take 180 g of starter, add water, honey, and 100 g each of wheat and rye flour. Mix everything together and wait. Our starter has already "awakened," and the sponge is actively bubbling.

3. Let the starter sit for 10-12 hours; if you won't be baking within this time, place it in the refrigerator afterward.

4. Now add the remaining ingredients for the dough, cover with plastic wrap, and let it rest for 2-3 hours. Make sure to leave some space under the wrap to allow the dough to rise.

5. Sprinkle the table with flour and start kneading the dough.

6. Place it in a container and leave for another 2 hours in a warm place.

7. Then remove from the mold, dust with flour, and make slashes. Place in a preheated oven at 200 degrees and bake until a dark crust forms (at 220 degrees, the bread bakes for about 35 minutes).

8. Then let it rest on a rack, and only after that slice and enjoy. That's it, our yeast-free scalded bread is ready!
