Step 1

Put the butter (100 g) into a saucepan and pour water over it.
- 2
Step 2

Place over low heat, add a pinch of salt. Wait until the mixture begins to boil. Sift in the flour.
- 3
Step 3

Vigorously mix the dough with a spatula. When the dough starts to shine, remove it from the heat.
- 4
Step 4

Whisk the eggs with a whisk.
- 5
Step 5

Gradually pour the beaten egg mixture into the dough. Beat vigorously with a mixer.
- 6
Step 6

Put the resulting dough into a piping bag and freely squeeze it onto parchment paper. In this case, I chose a ring shape—it looks beautiful. You can experiment with any other shape. Bake in the oven at 200 degrees Celsius for 25 minutes.
- 7
Step 7

We proceed to prepare the cream. Grind the sugar in a mortar to make powdered sugar.
- 8
Step 8

Beat the butter (slightly softened) with powdered sugar using a mixer. Add vanilla sugar.
- 9
Step 9

Then gradually add the condensed milk and beat thoroughly again.
- 10
Step 10

Pour in a little cognac and mix everything with a mixer. Then sieve the cottage cheese, add it to our mixture, and beat thoroughly.
- 11
Step 11

We carefully cut the cooled pastries in half with a knife and generously fill them with cream.
- 12
Step 12

Cover the cream with the second half of the base — and it's ready! You can serve it!
