Cream cheese choux pastry
Description
Delicious baked goods for the whole family. To successfully prepare the choux pastry with cottage cheese, it's very important to strictly follow the instructions. A crucial step is adding eggs to the dough. The dough must be cooled first; otherwise, the eggs will curdle. Also, do not open the oven during baking. Mix the cottage cheese with cream and sugar, then fill the prepared pastries with this mixture. Serve cooled or slightly warm.

Step 1

The optimal baking temperature is 180–190 degrees. You can preheat the oven during dough preparation to save time. Pour a glass of water into a saucepan, add sugar, salt, and butter cut into pieces. Heat over low heat, stirring constantly.

Step 2

When the butter has completely melted and the mixture begins to boil, add the flour and quickly and thoroughly mix everything. You can place the mixture over low heat, continuing to stir vigorously. This will make it smooth, thick, and no longer stick to the sides.

Step 3

Remove the pot from the heat and let the dough cool slightly, but it should not be cold. Then add the eggs one at a time, thoroughly mixing the mixture after each addition to achieve maximum uniformity. Attention! It is very important to cool the dough sufficiently so that the eggs do not curdle. The finished dough should have a consistency similar to warm, sticky modeling clay.

Step 4

Line a baking sheet with foil, then spoon the dough onto it or pipe it using a pastry bag—feel free to get creative with shapes! A small tip: you can moisten the spoon with water to prevent the dough from sticking. Place the items in the oven for 35–40 minutes. Important! Do not open the oven during baking, otherwise the dough will collapse and you'll lose all the fluffiness.

Step 5

Prepare the filling – beat the cottage cheese with sugar and cream into a smooth, creamy mixture.

Step 6

Let the finished products cool, make a cut on top, and fill them with the filling. You can use either a pastry syringe or a spoon for this. Dust with powdered sugar and serve. Ready!
