I'd like to clarify right away that the proportions given are intended for making pancakes, but this fermented dough made with kefir at home can also serve as an excellent base for buns, chebureki, fritters, or other baked goods. In such cases, the amount of flour should be increased to achieve the desired dough consistency.

First, place the eggs, sugar, and a pinch of salt into a deep bowl. Beat everything until smooth. It's most convenient to use kitchen appliances such as a mixer or blender.

Pour in the kefir and vegetable oil. Mix everything again.

Gradually add the flour, sifted with baking soda, while continuing to beat. The batter should become smooth and free of lumps.

Pour in boiling water in a thin stream, continuously and quickly stirring.
