
Choux pastry with egg yolks
Description
Homemade baked goods for tea. Choux pastry is a type of dough in which flour is fully or partially scalded with water, milk, or another liquid. There are many variations of choux pastry: it can be made with or without eggs, using water, milk, margarine, or even whey. This dough is usually not sweet, sometimes only a pinch of salt is added. Melt the margarine in a double boiler. You can also do this over low heat, but be careful not to burn the margarine.

Without removing from the heat, add the flour in small portions, stirring vigorously. The dough has cooked, but it still lacks egg yolks.
