Cream puff with custard filling

Description

Delicious baked treats for the whole family. A familiar childhood flavor: everyone knows eclairs, and surely every homemaker has made them at least once. Pastries made with this recipe always turn out very tasty, light, and aromatic. I add whipped cream to the filling to make it richer, as well as liqueur to enhance the cream's flavor. The choux pastry is very easy to prepare; you won't have any problems as long as you let it cool before adding the beaten eggs. Serve cooled or slightly warm.

    1. Prepare the choux pastry. Mix 150 grams of flour, 1 teaspoon of salt, and 15 grams of sugar.

    2. Take milk (it can be diluted 50/50 with water). Add butter and place over low heat. When the butter melts, increase the heat and quickly bring the mixture to a boil.

    3. Add the prepared flour mixture. Remove the saucepan from the heat and mix thoroughly. A smooth ball should form, easily pulling away from the sides of the saucepan. Do not overmix the dough to prevent it from becoming oily.

    4. Let the dough cool for about 15 minutes. Then gradually add 4 beaten eggs to the dough and mix gradually until you get a shiny mixture.

    5. Using a pastry bag, pipe the dough onto a baking sheet in strips of desired length. Bake in a preheated oven at 220°C for 15 minutes, then reduce the temperature to 190°C and bake for approximately 15–20 minutes until golden brown.

    6. When the cake is baked, make small holes in the bottom and sides to let the steam escape, then place it on a wire rack to cool.

    7. Prepare the cream. Take 5 egg yolks, add 125 grams of sugar, and mix well. Add 25 grams of flour and 25 grams of starch. Add a little warmed milk and mix.

    8. Pour the mixture into a saucepan with the remaining milk. Slowly heat the mixture over continuous stirring, bring to a boil, and cook for 1 minute. Cool the cream, covering it with plastic wrap. Add vanilla and liqueur for flavor.

    9. Add whipped cream to the cream to make it richer.

    10. Using a pastry bag, fill the prepared pastries with cream and dip them into the glaze. For the glaze, mix butter, milk, cocoa, and powdered sugar. Heat everything over low heat, stirring, until a smooth consistency is achieved.
