Description

The recipe won't take much time. I've remembered the taste of boiled meringue since childhood. Yes, boiled meringue and "Buratino" soda—that was all we needed for happiness :) As a child, I thought making boiled meringue was a very complicated process, but now I'm convinced otherwise. I hope my simple boiled meringue recipe will convince you too. The meringue turns out no worse than that made by professional confectioners—they essentially prepare it the same way.     Beat egg whites until stiff peaks form.

    In a small saucepan, add sugar and pour in water. Place over low heat and cook until the sugar dissolves.

    As soon as the sugar dissolves, pour the hot syrup over the beaten egg whites.

    Place the saucepan with the resulting mixture over a water bath. Cook the mixture over the water bath for about 10 minutes, constantly whisking it with a mixer at low speed. The final mass should resemble a soft soufflé.

    Transfer the resulting mixture into a special pastry bag (if unavailable, you can use a regular plastic bag with a small hole). Line a baking sheet with parchment paper and squeeze the meringue onto it in freeform shapes. Place in an oven preheated to 110 degrees and bake for about 1 hour. Remove the finished meringues from the oven, let them stand for 10 minutes—and they're ready!

    Store meringues in paper packaging in a dry and cool place. Ready!
