
Stuffed cabbage
Description
This is a vegan version of stuffed cabbage. It uses seitan—a plant-based meat substitute. You can replace it with textured soy protein or mushrooms (preferably wild ones). Instead of millet, you can use rice. The result is a tasty and filling dish, something between kulesh and bigos.

Prepare all the ingredients.

Cut the onion into cubes. Sauté the onion in a heavy-bottomed pot until soft.

Cut the seitan into small pieces. Add it to the pot with the onion and sauté together for 5-7 minutes.

Cut the sauerkraut into shorter pieces. Place it in a thick layer over the seitan with onions. Pour in water to cover the sauerkraut by 1 cm. Cover with a lid and simmer for 10 minutes without stirring.

Meanwhile, prepare the millet. To prevent it from becoming bitter, pour boiling water over it, stir, then rinse thoroughly. Repeat the procedure a couple more times.

Add the millet to the saucepan, salt, mix and cook over low heat for 20 minutes.

Mix the flour, soy sour cream, and a little water into a smooth mixture.

Add it to the pot and simmer everything together for another 5-6 minutes.
