Prepare the listed ingredients. Clean the bighead carp in advance, removing the scales, entrails, and the dark membrane inside the belly. Rinse and fillet. Use part of the bighead carp fillet.

Cut the fillet into medium-sized portion pieces. Remove any large belly bones, if you find any.

Place the fish slices in a glass jar or another tall earthenware or glass container. But not all the way to the top—leave a little space at the top for the brine.

In a deep container, combine the salt, bay leaves, and black peppercorns. If desired, you can also add other spices or seasonings.

Pour in the vegetable oil and mix thoroughly.

Pour the oil with spices into a jar and release air bubbles. Close with a lid and mix by shaking the jar. Place the container in a cold place for about 2-3 days.
