Description

It works for both holidays and everyday meals. You can make delicious lightly salted herring yourself if you enjoy this kind of appetizer. Serve the ready fish sliced into pieces or whole, always drizzling it with vegetable oil and adding rings of yellow onion. Lightly salted herring is especially good with a shot of chilled vodka. The appetizer is ready. Serve immediately.

    Prepare the listed ingredients. Buy fresh or frozen herring and thaw it in advance.

    Pour the salt and granulated sugar into a deep container, and add the bay leaves and black peppercorns to the same container.

    Pour in cold water and stir everything thoroughly so that both the salt and sugar dissolve in the liquid. The water can be regular tap water, filtered, etc.

    Scale the herring, rinse it in water, but do not slit the fish’s belly. Cut off the neck of a 1.5-liter bottle and place the herring into it head down.

    Pour the fish with the prepared brine. Try to make enough brine so that the fish is completely covered. Place the bottle in the refrigerator for 2–3 days. To get lightly salted herring, keep the fish in the brine for 2 days; for more heavily salted herring, keep it for 3 days. Turn the fish over every day for even salting.

    After the specified time, remove the salted herring from the jar, rinse it, and cut off the head and fins; slit open the belly and remove the innards. Also scrape off the black film inside the belly—it is very bitter. Serve the lightly salted herring with onion, drizzled with vegetable oil.
