1. Prepare all the ingredients needed to make the dish. Rinse the pork fatback thoroughly, scrape the skin, and cut the fatback into large pieces. Pour the water into a pot, bring it to a boil, then remove from the heat and let it cool.

2. Peel the garlic and pass it through a press.

3. Pour the water into the jar, add salt and ground pepper, and crushed garlic cloves; mix everything together.

4. Place the salo pieces in a jar and leave them at room temperature for two days. Then put the jar in the refrigerator for 3 days. When the time is up, remove the pieces, pat them dry slightly, and wrap them in foil. Store the salo in the refrigerator.
