
Fish Salting
Description
It works both for festive occasions and everyday meals. Instead of wine, you can use 2 tablespoons of vinegar, but you need to increase the amount of water. I recommend using dry wine; it gives the fish a special piquancy and aroma. It's better to choose sweet salad onions. Fish cured this way keeps for no more than 2 weeks. It can be served warm or chilled.

To prepare the brine, pour water and wine into a pot, add sugar, salt, and spices. Bring to a boil and set aside to cool in a cold place.

Clean the herring, remove the gills and fins. Cut it into pieces 1–1.5 cm thick.

Slice the onions into rings.

In a deep container, layer the fish and onion, then pour in the brine. Cover the container tightly and leave it in a cool place for 24 hours.

Serve the fish with fresh herbs.
