If you're interested in how to pickle tomatoes in barrels, read this recipe. It provides detailed instructions on how to make an excellent winter preserve that your entire family, as well as guests, will admire. The preserve is ready for winter storage.

Instructions

  1. 1

    Step 1

    Step 1

Prepare all the ingredients you will put in the pickling barrel. Wash the tomatoes and remove their stems. Rinse the herbs and peel the garlic. Place the herbs and dill seeds on the bottom of a clean barrel.

  2. 2

    Step 2

    Step 2

Add a couple of cloves of garlic and arrange one layer of tomatoes. Don’t add too many tomatoes at once — they should be well layered with spices so they marinate properly.

  3. 3

    Step 3

    Step 3

Now on the layer of tomatoes, again lay out the herbs and add cloves of garlic. Repeat these steps until the barrel is completely filled with tomatoes.

  4. 4

    Step 4

    Step 4

After placing the last layer of tomatoes, make sure it sits slightly below the rim of the barrel, by about a couple of centimeters. On top, lay a large horseradish leaf, first tearing it by hand into large pieces.

  5. 5

    Step 5

    Step 5

Now you need to prepare the brine for the tomatoes. To do this, mix 900 g of salt with 15 liters of water. This is easier to do in portions if you don't have such a large container. Pour the brine over the tomatoes and cover them with clean cheesecloth on top. Place a plate and a weight on the cheesecloth so the tomatoes don't float. In a couple of weeks, the tomatoes will be ready to eat.
