Pickling Tomatoes in Jars

Description

Winter preserve made at home. This simple recipe for salting tomatoes in jars came to me from my mother. I could eat her "signature" tomatoes anytime! So I simply had to learn how to make them myself. I succeeded! It turned out to be very easy, so I am happy to share it with you. Serve at the table or store in the pantry.

    1. Wash the tomatoes thoroughly, remove the stems and any small debris. Let them sit in cold water for a while. Meanwhile, divide the "broom" into two parts, break the branches into small pieces, and place them on the bottom of two sterilized jars.

    2. Cut the garlic bulb in half, peel it, and divide the cloves evenly. Into each jar, place a bay leaf, pepper, garlic, and cloves. Dissolve the salt in 0.5 liter of boiling water, and pour this brine evenly into the jars.

    3. Next, pack the tomatoes up to the “shoulders” of the jars. If you like, you can place the “broom” not only on the bottom, but also between the tomatoes, and leave some on top. Pour in regular clean water and seal with lids. Store for three days on the windowsill (but not in direct sun), then for 2 weeks in the refrigerator.

    4. If there isn't much room in the refrigerator, you can store the jars in a cellar, on the balcony (if it's cold outside), or in the basement. After the specified time, you'll get such delicious tomatoes!
