Pickling Tomatoes with Onions for Winter

Description

I'm sharing a simple recipe for salting tomatoes with onions for winter. The tomatoes turn out very tasty. Of course, traditionally tomatoes are salted in a barrel or pot for two, three, or even more days, but I think this method is both simpler, and the tomatoes end up more tender. Give it a try. Store in a cool, dark place.

    1. Sterilize the jars and lids; wash and clean the vegetables thoroughly. Place sweet pepper pieces, dill, black pepper, onion, and carrot on the bottom.

    2. Pierce each tomato with a toothpick at the stem end — this will help keep the skin from bursting. Place them in the jar, cover with boiling water, and let stand for 15 minutes. Then drain the water and pour in fresh boiling water. Repeat this procedure three times.

    3. Pour the water from the jar into a saucepan one last time and bring to a boil, dissolving the salt and sugar. Add the vinegar, garlic, and bay leaf as well, stir, and pour this marinade over the vegetables. Seal for winter storage.

    4. Wrap the jars in something warm until completely cool and store them upside down. When cool, move them to the cellar. Done!
