
Pickling Cornichons
Description
I want to tell you how to pickle gherkin cucumbers at home. Preparing the cucumbers takes a little longer than simple cucumber canning. The cucumbers turn out crispy and aromatic. Happy cooking! The preserve is ready to store for winter.

Step 1

Before pickling, the cucumbers should be washed, then covered with cold water for 4 hours. Chop the herbs, mix them, and distribute among clean jars.

Wash the cucumbers and arrange them in jars, pour boiling water over them. Let stand for 15 minutes. Drain the water and put on the heat, adding 3 tbsp. of salt and 2 tbsp. of sugar to each three-liter jar. Pour the boiling brine over the cucumber jars again. Before pouring, add 3 tbsp. of vinegar to each jar. Leave the jars at room temperature for 24 hours.

After 24 hours, drain the water and bring it to a boil again, adding a little more water. Put garlic in the jars and pour in boiling brine. Seal with lids, turn the jars upside down, and wrap them in a blanket. Once cooled, store in a cool place.
