Pickling Onions for Winter

Description

Homemade preserves keep for a long time. This simple recipe for pickling onions for winter is very popular in my family. My grandmother had a large garden, and she gladly made such useful pickles for winter. She shared this recipe with my mother, who in turn shared it with me. I only make a couple of jars—enough until the next harvest. Try it yourself too; it's really simple. The jars keep for up to a year in a cool place.

    1. Sort through the onions carefully. Use only fresh, undamaged stems. Wash and dry them. Chop finely and place in a saucepan.

    2. Add the salt and mix thoroughly. If the onion is not very juicy and the salt does not dissolve, crush it a little. The mixture should be smooth and uniform, with no salt crystals.

    3. Pack the mixture into prepared sterile jars. Pack it as tightly as possible, then pour vegetable oil on top. Seal with sterile lids and store in a cool, dark place.
