
Salting Red Fish
Description
I want to share how to cure red fish at home. Give it a try — the result is very high quality. The fish is not too salty and does not lose its natural flavor. It works very well for festive sandwiches. I recommend serving it with fresh herbs and sauce.

1. Clean the fish if necessary. If you already have ready-made fillets, skip this step.

2. I ended up with two large fillet pieces. I mix the salt, sugar, and pepper together. Sprinkle some of this mixture on the bottom of a clean bowl, then add the fish, then another portion of the spices, lemon slices, and a bay leaf, then more fish. Sprinkle the top piece with spices as well.

3. Place the bowl with the fish in the refrigerator for two days. After two days, remove the fish and rinse it in clean water for 10 minutes.

4. Next, you can pat it dry with a paper towel and let it air dry (one hour). If you prefer the fish to be soft, simply chill it and serve right away!
