
Pickling Cabbage for Winter

Prepare all the ingredients.

Finely shred the cabbage.

Peel the carrots and grate them on a grater.

Sprinkle the cabbage with salt and gently massage it with your hands until it softens. Do not squeeze too hard—the cabbage should stay crisp. Add the carrot and mix.

Pack the cabbage tightly into a sterilized jar.

Pour cold water on top so it covers the cabbage. Leave at room temperature for 3–4 days. It’s best to set the jar in a bowl, as liquid may leak out during fermentation. Each day, pierce the cabbage with a wooden stick so the gases can escape.

Drain the brine, dilute it with sugar, and pour it back into the jar. Then close the jar with a lid and store it in a cool place. This way, the cabbage can safely keep all winter long.
