
Salting Salmon Roe

1. Rinse the fish thoroughly under running water. Remove the innards. Carefully separate the roe, trying not to damage the membrane.

2. Take 2 deep bowls. Pour cold water into one and hot water into the other. Wrap the caviar in a piece of cheesecloth. Hold the ends of the cheesecloth and dip the caviar into the hot water, then into the cold water. Each dip in the water should last 1–2 minutes.

3. Very carefully remove the membrane from the roe. Place it in a colander and rinse thoroughly under water.

4. Transfer the roe to a jar, salt it, add sugar and vegetable oil. Place in the refrigerator to rest briefly (for about 10–12 hours). That’s it—the salmon roe salting is done.
