A tasty appetizer for any gathering. I’m happy to share with you how to salt-cure red fish in the refrigerator. Note that the brine includes not only salt but also honey—so the fish will have a very interesting, original flavor. Give it a try. Serve with herbs and sauce.

    Pour water into a small saucepan, add salt, and heat gently until the salt dissolves.
