
Salting Red Fish with Vodka
Description
It works for both special occasions and everyday meals. The simplest way to prepare red fish is curing. Try making the fish with a little vodka added—the appetizer will taste better, and the preparation time will be cut by a third. The main thing is to choose good-quality alcohol.

Prepare the listed ingredients. You can use any type of red fish: salmon, Atlantic salmon, keta, etc.

Cut a piece of fish in half, carefully trim away the backbone and flesh from the skin. Rinse thoroughly in water, removing any small scales. Pat the fish pieces dry with paper towels and place in a deep container.

Sprinkle with salt and ground black pepper on all sides.

Pour in the vodka and lightly crush each piece.

Cover with plastic wrap, leaving a small opening, or with a cellophane bag. Place in the refrigerator for 1–2 days. Don't forget to turn it over a couple of times for even salting.
