Instead of rice vinegar, you can use apple cider vinegar, and sesame oil can be substituted with another vegetable oil, such as peanut oil. Sugar is optional and can be replaced with sweet syrup or honey, or omitted entirely. This sauce can be used to dress both cold and hot noodles. The resulting sauce is aromatic, spicy, and very rich in flavor. Serve chilled or at room temperature.

Prepare all the ingredients.

Peel the garlic and ginger root, then finely chop. Alternatively, you can grate them on a fine grater or press the garlic.

In a small saucepan, combine water with soy sauce and rice vinegar.
